A lot of people get instantly bored when they hear the word “soup”, but this roasted butternut squash recipe is really fabulous!
Butternut squash soup has been a popular restaurant menu item over the last 5 years or so. When you roast butternut squash it becomes sweet and smooth, with hints of caramel. The squash pretty much does all the work for you as it slowly cooks in the oven. You just sort of have to blend a few ingredients into the mashed squash and you will have an amazing soup for cool fall day.
